For cocktails and mixed drinks, using a consistent pour volume for your spirits helps to achieve the right strength, and therefore taste. For all drinks, including neat serves, it will also help control your stock, and – from a responsible service perspective – make sure you are not giving your guests too much alcohol (or too little).

Remember:

  • Over pouring = unhappy manager (and drunk guests, possible legal action).
  • Under pouring = unhappy guest.
